Ginger Crunch Slice

Nice change from traditional Ginger Crunch

Serves 30 people

Ingredients

  • 250 g butter, softened
  • 3/4 C sugar
  • 1 C self raising flour
  • 1 C plain flour
  • 1 t ground ginger
  • 1/2 C crystallised ginger, chopped
  • Icing:
  • 1/4 C golden syrup
  • 80 g butter, softened
  • 3 t ground ginger
  • 2 1/4 C icing sugar, sifted
  • Extra ginger chopped optional

Directions

  1. Cream butter and sugar.

  2. Add remaining ingredients for base.

  3. Press into greased or paper lined 20cm x 30cm lamington pan.

  4. Bake at 180oC approx 20 minutes.

  5. Icing:

  6. Melt together syrup, butter and ginger. Add sifted icing sugar, stirring until combined.

  7. Pour over cooled base and sprinkle with extra chopped ginger if using.

  8. Cut when set.
