Ginger Crunch Slice

Nice change from traditional Ginger Crunch

Ingredients
- 250 g butter, softened
- 3/4 C sugar
- 1 C self raising flour
- 1 C plain flour
- 1 t ground ginger
- 1/2 C crystallised ginger, chopped
- Icing:
- 1/4 C golden syrup
- 80 g butter, softened
- 3 t ground ginger
- 2 1/4 C icing sugar, sifted
- Extra ginger chopped optional
Directions

Cream butter and sugar.

Add remaining ingredients for base.

Press into greased or paper lined 20cm x 30cm lamington pan.

Bake at 180oC approx 20 minutes.

Icing:

Melt together syrup, butter and ginger. Add sifted icing sugar, stirring until combined.

Pour over cooled base and sprinkle with extra chopped ginger if using.

Cut when set.
