Best Ever Anzac Biscuits

Really nice, failproof recipe with variations to try
Prep time: 10 minutes
Cook time: 15 minutes
Serves 30 people

Ingredients
- 1 C plain flour
- 1 C rolled oats
- 1 C dessicated coconut
- 1/2 C brown sugar
- 1/4 C caster sugar
- 125 g butter
- 2 T golden syrup
- 2 T water
- 1/2 t baking soda
Directions

Melt together butter, syrup & water, stir in baking soda.

Mix together dry ingredients and stir in liquid mixture.

Bake in 1 tablespoon lots, placed 5cm apart on paper lined biscuit tray at 160oC, approx 15 minutes. Cool slightly on tray before removing to cooling rack.

Options:
-
For soft and chewy cookies, use 3/4 C caster sugar and omit brown sugar.

For dark and crunchy cookies, use 3/4 C brown sugar and omit caster sugar.

Or: try using wholegrain oats for a change.
