Best Ever Anzac Biscuits

Really nice, failproof recipe with variations to try

Prep time: 10 minutes
Cook time: 15 minutes
Serves 30 people

Ingredients

  • 1 C plain flour
  • 1 C rolled oats
  • 1 C dessicated coconut
  • 1/2 C brown sugar
  • 1/4 C caster sugar
  • 125 g butter
  • 2 T golden syrup
  • 2 T water
  • 1/2 t baking soda

Directions

  1. Melt together butter, syrup & water, stir in baking soda.

  2. Mix together dry ingredients and stir in liquid mixture.

  3. Bake in 1 tablespoon lots, placed 5cm apart on paper lined biscuit tray at 160oC, approx 15 minutes. Cool slightly on tray before removing to cooling rack.

  4. Options:

  5. For soft and chewy cookies, use 3/4 C caster sugar and omit brown sugar.

  6. For dark and crunchy cookies, use 3/4 C brown sugar and omit caster sugar.

  7. Or: try using wholegrain oats for a change.
