Blueberry Muffins

Ingredients

  • 2 1/2 C flour
  • 1/4 C sugar
  • 1 1/2 t baking powder
  • 1 t baking soda
  • 1 C milk
  • 1/2 C sour cream
  • 125 g butter, melted & cooled
  • 1 egg
  • 2 C blueberries, fresh or frozen & defrosted

Directions

  1. Sift flour, sugar, baking powder & baking soda into large bowl, make well in centre.

  2. In separate bowl, mix together milk, sour cream, butter and egg.

  3. Pour liquid ingredients into well of dry mix, add blueberries.

  4. Mix gently, and only until all ingredients are just incorporated. Do not overmix.

  5. Spoon muffin mixture into 12 greased or paper lined muffin cups.

  6. Bake at 190oC approx 12-15 minutes, until golden and firm to touch.
