Golden Fruitcake

Nice alternative light Christmas Cake recipe

Ingredients
- 1 C each cubed, crystallised mango, papaya & pineapple
- 2 C sultanas
- 1 C white wine, or 1/2 juice & 1/2 water
- 1/2 C glace cherries
- 250 g butter, softened
- 1 C sugar
- 5 large eggs
- 1 t vanilla essence
- grated rind 1 orange & 1 lemon
- 1 C ground almonds
- 1 1/2 C high grade plain flour
- 1 1/2 t baking powder
Directions

Simmer sultanas & crystallised fruit in wine/juice 5 minutes, until liquid is almost absorbed.

Leave, covered overnight. Stir in cherries.

Cream butter and sugar, add eggs singly, along with a spoonful of ground almonds each time.

Beat in remaining ingredients.

Bake in well-lined 20-23cm cake pan at 150oC for 45 minutes, then at 130oC for

Can be iced, or served plain.
