Golden Fruitcake

Nice alternative light Christmas Cake recipe

Ingredients

  • 1 C each cubed, crystallised mango, papaya & pineapple
  • 2 C sultanas
  • 1 C white wine, or 1/2 juice & 1/2 water
  • 1/2 C glace cherries
  • 250 g butter, softened
  • 1 C sugar
  • 5 large eggs
  • 1 t vanilla essence
  • grated rind 1 orange & 1 lemon
  • 1 C ground almonds
  • 1 1/2 C high grade plain flour
  • 1 1/2 t baking powder

Directions

  1. Simmer sultanas & crystallised fruit in wine/juice 5 minutes, until liquid is almost absorbed.

  2. Leave, covered overnight. Stir in cherries.

  3. Cream butter and sugar, add eggs singly, along with a spoonful of ground almonds each time.

  4. Beat in remaining ingredients.

  5. Bake in well-lined 20-23cm cake pan at 150oC for 45 minutes, then at 130oC for

  6. 1 1/2 – 2 hours.

  7. Can be iced, or served plain.
