Asparagus Soup (Thanksgiving)

Ingredients

  • 1# asparagus
  • 3/4 C onion chopped
  • 1/2 C vegetable broth
  • 11/4 C vegetable broth
  • 1 C milk
  • 1T butter
  • 2T flour
  • 1 t salt and pepper
  • 1/2 C yogurt
  • 1 t lemon juice
  • 1/4 C grated Parmesean cheese

Directions

  1. Place asparagus and onion in sauce pan with 1/2 C vegetable broth.

  2. Simmer until done.

  3. Reserve a few tips – blend the rest.

  4. Melt butter.

  5. Sprinkle in flour, salt, and pepper.

  6. Stir in remaining broth.

  7. When boiling – add aparagus puree and milk.

  8. Whisk in yogurt and lemon juice.

  9. Stir until hot.

  10. Serve topped with parm and reserved tips.
