White Chocolate, Macadamia & Raspberry Blondie

Very wicked, but absolutely divine

Prep time: 15 minutes
Cook time: 40 minutes
Serves 30 people

Ingredients

  • 185 g butter, chopped
  • 450 g white eating chocolate, chopped
  • 1 1/4 C caster sugar
  • 3 eggs, lightly beaten
  • 1 C plain flour
  • 1 C self raising flour
  • 3/4 C unsalted macadamia nuts, toasted & chopped coarsely
  • 150 G raspberries, fresh or frozen

Directions

  1. Combine butter & two thirds of chocolate in large saucepan, stir over low heat until smooth.

  2. Cool 10 minutes.

  3. Stir sugar and eggs into butter mixture.

  4. Stir in sifted flours, remaining chocolate & macadamias.

  5. Gently fold in raspberries.

  6. Spread mixture into greased and paper lined 20cm x 30cm slice pan.

  7. Bake at 180oC approx 40 minutes.

  8. Cool in pan.

  9. Dust with icing sugar and cut into pieces.
