White Chocolate, Macadamia & Raspberry Blondie

Very wicked, but absolutely divine
Prep time: 15 minutes
Cook time: 40 minutes
Serves 30 people

Ingredients
- 185 g butter, chopped
- 450 g white eating chocolate, chopped
- 1 1/4 C caster sugar
- 3 eggs, lightly beaten
- 1 C plain flour
- 1 C self raising flour
- 3/4 C unsalted macadamia nuts, toasted & chopped coarsely
- 150 G raspberries, fresh or frozen
Directions

Combine butter & two thirds of chocolate in large saucepan, stir over low heat until smooth.

Cool 10 minutes.

Stir sugar and eggs into butter mixture.

Stir in sifted flours, remaining chocolate & macadamias.

Gently fold in raspberries.

Spread mixture into greased and paper lined 20cm x 30cm slice pan.

Bake at 180oC approx 40 minutes.

Cool in pan.

Dust with icing sugar and cut into pieces.
