Home Made Tomato Relish

Nice to serve with assorted flavoured quiches or pies
Will store in refrigerator one week
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients
- 1 T olive oil
- 1 clove garlic, crushed
- 1 medium brown onion, chopped finely
- 4 large ripe tomatoes, chopped coarsely
- 2 T balsamic vinegar
- 1 T brown sugar
- 2 T basil leaves, freshly torn
Directions

Heat oil in medium pan, and add garlic & onion.

Cook, stirring, until lightly browned.

Add tomatoes, vinegar & sugar and simmer, uncovered, approx 30 minutes or until mixture is reduced by half. Stir occasionally.

Stir in basil, and season with salt & pepper to taste.
