Home Made Tomato Relish

Nice to serve with assorted flavoured quiches or pies
Will store in refrigerator one week

Prep time: 10 minutes
Cook time: 30 minutes

Ingredients

  • 1 T olive oil
  • 1 clove garlic, crushed
  • 1 medium brown onion, chopped finely
  • 4 large ripe tomatoes, chopped coarsely
  • 2 T balsamic vinegar
  • 1 T brown sugar
  • 2 T basil leaves, freshly torn

Directions

  1. Heat oil in medium pan, and add garlic & onion.

  2. Cook, stirring, until lightly browned.

  3. Add tomatoes, vinegar & sugar and simmer, uncovered, approx 30 minutes or until mixture is reduced by half. Stir occasionally.

  4. Stir in basil, and season with salt & pepper to taste.
