Tuscan Cannellini Bean salad

Can be served warm or cold as left over (also ok to re-heat)

Cook time: 25 minutes
Serves 3 people

Ingredients
- 1 can cannellini beans
- 1t olive oil
- 2 cloves garlic, minced
- 2 large zucchini, chopped
- 1 large red or yellow pepper chopped
- 1T fresh rosemary chopped (1t dried)
- 1T fresh oregano chopped (1t dried)
- sea salt to taste
- fresh ground pepper to taste
- 2T white wine
Directions

Heat large pan to medium and sauté garlic in olive oil til it softens.

Add zucchini to pan and soften.

Add pepper to pan and soften.

Stir in drained beans.

Add herbs, salt and pepper

Add white wine
-
Simmer 10 min

Serve on it’s own, or over spinach or rice.
