Spinach quiche

Serves 8 people
Ingredients
- 8 eggs, beaten
- 240g spinach (1 bag)
- 1c standard cottage cheese
- 1 bunch spring onion, finely chopped (white part)
- 1/2c onion finely chopped
- 1c mushrooms sliced
- 2 cloves garlic, minced
- 1T macadamia oil
- salt and freshly ground pepper to taste

Preheat oven to 165 C

lightly grease a 9 inch glass baking dish

saute garlic in oil for 1 min

add yellow onion, mushrooms and green onion, cook until tender

Soften spinach in a small saucepan, drain

stir everything together

add salt and pepper to taste

pour into prepared baking dish

bake uncovered for 1h or until eggs are set
