Chickpea flour gravy

Serves 3 people
Ingredients
- 1/4c butter
- 1 pack mushrooms sliced
- 1/3c chickpea flour
- 1c chicken or vegetable broth (plus more to thin, if needed)
- herbs to taste (I like fresh or dried sage or oregano)
- salt and pepper to taste
Directions

melt 1/2 butter in saucepan over med/high heat

add mushrooms and herbs if desired, cook til done – remove from pan

add remaining butter

stir in chickpea flour

whisk in 1c cold broth – add more if needed

simmer
-
add cooked mushrooms
-
simmer til desired consistency

add salt and pepper to taste
