Thai salmon fish cakes

Ingredients
- 300g salmon fillets
- 2t Thai red curry paste
- 3T chopped fresh coriander
- 1 can white beans
- 2 eggs
Directions

simmer beans in water until soft (around 8 min)

put raw salmon, egg, curry paste and coriander in a food processor

add drained, cooled beans (so as not to cook the egg!)

pulse to form a rough mixture

form 4 – 6 patties – if not sticking add a dash of olive oil and reblend the mixture

heat oil in pan, and fry 5 min per side
