How to cook delicious spinach

Serves 4 people

Ingredients

  • 2 large bunches of washed spinach (about 1lb)
  • extra virgin olive oil
  • 3 cloves garlic, sliced
  • salt and pepper to taste

Directions

  1. Cut off thick spinach stems

  2. heat 2T olive oil in large skillet on med/high heat

  3. add garlic and sauté 1 min until it starts to brown

  4. add spinach to pan, packing it down if needed

  5. using one or two spatulas, turn it over in the pan to coat with olive oil and garlic a couple of times

  6. cover pan and cook 1 min

  7. uncover and flip spinach again

  8. cook another minute

  9. drain excess liquid

  10. maybe add a little more olive oil

  11. sprinkle with salt/pepper

  12. serve immediately
