herbed salmon fillets with herb and corn salad

Serves 4 people

Ingredients

  • 4 x 200g salmon fillets, skinned and boned
  • 2 corn cobs
  • 1c basil leaves
  • 1c mint leaves
  • 1c coriander leaves
  • 1 long red chilli seeded and sliced
  • 1T lime juice
  • 2T olive oil
  • lime wedges to serve

Directions

  1. preheat BBQ or char-grill

  2. Brush the salmon and corn with the oil and sprinkle with the salt and pepper.

  3. Cook corn for 5-6 ,minutes each side or until tender

  4. Cook salmon 2 – 3 min 3 each side until done to taste

  5. Cut the corn kernels from the cob and place in a large bowl with the salmon, basil, mint, coriander and chilli.

  6. Drizzle over the lime juice and extra oil

  7. toss to combine.

  8. Divide between four plates and serve with the lime wedges
