Val’s Party Potato Salad

Ingredients

  • 5 Lbs. red potatoes boiled, cooled and peeled.
  • 1 sm onion, chopped
  • 2-3 inner stalks of celery, chopped
  • 1 c mayonnaise
  • 1 c sour cream
  • 3-4 slices of bacon, fried, drained and crumbled
  • 4 hard boiled eggs cut into quarters

Directions

  1. In a large bowl, combine mayonnaise, sour cream, onion and celery. Salt lightly and mix well. Cut potatoes into quarters and then thinly slice. Mix with dressing, cover and refrigerate at least one hour before serving. To serve arrange eggs around edge of bowl. Sprinkle with crumbled bacon.
