Pot Roast

Cook time: 90 minutes
Serves 5 people
Ingredients
- 3 lb Pot Roast
- 2 T shortening
- 6 red potatoes, washed, peeled and quartered
- 10-12 Baby carrots, washed
- 2 stalks celery, washed and cut into 1/2 inch slices
- 1 beef boullion cube
- 1 C warm water
- Salt and Pepper to taste

Brown meat in heated dutch oven with 2 T shortening

Add boullion cube and warm water

Add quartered potatoes, salt and pepper.

Add carrots and celery. Cook for 1 hour. Check and add more water if needed. Continue to cook 30-45 minutes until meat/potatoes are tender.
