Ingredients
- 1 C red lentils
- 1 med carrot - chopped
- 1 med potato - chopped
- 1 med onion - chopped
- 1 T tomato paste
- 1 tomato - chopped
- 6 C water
- salt and pepper to taste
Directions

Boil carrots, lentils, and potato in water.

Remove froth.

In non-stick pan saute onion with oil of your choice or a little bit of the lentil water.

Add tomato.

Add paste.

Add to boiling lentil mixture.

Simmer ~20 min.

Use immersion blender (or regular blender) to blend slightly.
