Ingredients
- 1/3 C onion
- 1T garlic
- 1 1/4 C chicken broth
- 1C potatoes (cubed into 1/4 inch cubes)
- 1C milk
- 1/2 t salt
- 1T parsley
- 1T corn starch
- 8 oz sausage (1/2 of Turkey Sausage recipe)
- 1C spinach or kale
Directions

Saute onion and garlic in a little broth in a large pot.

Add potatoes, 1C broth, milk, salt, pepper, and parsley.

Boil – reduce to low and simmer 20 min.

Mix remaining broth with corn starch and add to simmering pot.

Cook for 1 min.

Chop spinach and add to soup with sausage. Cook 10 min.
