Ingredients
- 2 stalks lemon grass
- 2 medium onions
- 1 C fresh cilantro
- 2" fresh ginger
- 1/4 C fish sauce
- 1 jalapeno
- 4 cloves garlic
- 1 T ground coriander
- 2 t sugar
- 1 t grated lime peel
- 1 can coconut milk (14oz)
- 12 chicken thighs (skin removed)
Directions

Cut everything into pieces, put in a bowl, (take all the seeds out of the jalapeno) pour in the coconut milk and use immersion blender to form a smooth sauce.

Put in crock pot.

Brown chicken thighs in oil on stovetop.

Add chicken to sauce in slow cooker.

Cook on low for 3 hrs (High for 2 hrs)
