Ingredients
- 2 dried red chilies (remove seeds and spines)
- 3" lemon grass
- 2 lime leaves
- 2T olive oil
- 1 can coconut milk
- 2 boneless, skinless chicken breasts thinly sliced
- 1 can straw mushrooms
- 1/2 t salt
- 2T fish sauce
- 1C thinly sliced purple cabbage
- fresh mint leaves chopped for garnish
Directions

Grind chili, lemon grass, and lime leaves in coffee grinder or food processor.

Saute chili mixture in 2T oil for ~3 minutes.

Add coconut milk and bring to a boil.

Add chicken and simmer until chicken is cooked.

Add straw mushrooms and bring back to a boil.

Pour over cabbage in a serving dish.

Garnish with mint leaves.
