Tomato Chutney

Ingredients

  • 2 lb ripe tomatoes, peeled and seeded and cut into 1/2 inch pieces
  • 3/4 cup cider vinegar
  • 1/2 cup packed dark brown sugar
  • 1 tsp salt
  • 1 tsp ground ginger
  • 1/2 tsp cumin

Directions

  1. In a medium saucepan, stir together tomatoes, vinegar, brown sugar, onion, and other ingredients. Bring to a boil over high heat. Boil 18-22 minutes, stirring occasionally, or until the liquid has cooked off, set aside and keep warm.
