Dianne’s Spinach & Cheese Dip in a Cobb Loaf

Nice for pre-dinner Nibbles

Serves 12 people

Ingredients

  • 1 cobb loaf
  • 2 C grated cheese
  • 1 C cream cheese
  • 3/4 C mayonnaise
  • 1 onion, diced
  • 1-2 t curry powder
  • spinach, chopped - amount to your liking

Directions

  1. Cut ‘lid’ off cobb loaf, and hollow out bread, leaving a shell.

  2. Combine all dip ingredients.

  3. Spoon into hollowed out loaf.

  4. Wrap in foil and bake in moderate oven – 180oC – approx 30 – 60 minutes, until dip is hot and loaf is crunchy.

  5. Serve with additional slices of crunchy french bread, tortilla chips, carrot or celery sticks, or other vegetables of your liking.

  6. Bread ‘shell’ may also be broken up and eaten with remaining dip.
