Lemon Blueberry Slice

Light and delicious
Can be made with raspberries
White chocolate pieces are also a nice addition

Prep time: 15 minutes
Cook time: 30 minutes
Serves 12 people

Ingredients

  • 125 g butter
  • 3/4 C caster sugar
  • zest 1 lemon
  • 2 eggs
  • 1/2 C sour cream
  • 1 1/2 C self raising flour
  • 1 C blueberries, fresh or frozen

Directions

  1. Cream butter, sugar and lemon zest.

  2. Add eggs and sour cream, beating until combined.

  3. Stir in sifted flour.

  4. Spread into paper lined 20cm cake tin or slice tin.

  5. Top with berries.

  6. Bake at 180oC approx 30 – 45 minutes.

  7. Serve, dusted with icing sugar or

  8. make a glace icing and pour over.

  9. Also nice as a dessert, served with whipped cream or greek yoghurt.
