Apple or Apricot Shortcake

Tender pastry which can be filled with fruit or jam as a nice slice for afternoon tea or as a dessert

Prep time: 15 minutes
Cook time: 30 minutes
Serves 12 people

Ingredients

  • 125 g butter softened,
  • 3/4 C sugar
  • 1 egg
  • 1 large cup flour
  • 1 1/2 t baking powder
  • Well drained fruit eg: stewed apple, apricots cooked and 'smashed' or mix of both
  • Or jam of choice - plum, raspberry, lemon honey

Directions

  1. Cream butter and sugar, add egg.

  2. Add sifted flour and baking powder.

  3. Press half mixture into paper lined 20cm square cake tin.

  4. Top with fruit.

  5. Spread with remaining pastry for top.

  6. Bake at 180oC approx 30 minutes.

  7. Note:

  8. This is a soft shortcake, but it will ‘meld’ together during cooking.
