Whole Wheat Sandwich Bread

Dry Active Yeast Based. Whole Wheat and Unbleached White Flour Mixture

Ingredients

  • Poolish
  • 200grams whole wheat flour
  • 2oograms warm water
  • 1/8 tsp. active dry yeast
  • Dough
  • Total amount of Poolish
  • 225grams whole wheat flour
  • 75 grams unbleached white flour
  • 10 grams salt
  • 110 grams water
  • 2 tsp. active dry yeast
  • 3 tbsp. honey/sugar
  • 42 grams oil/melted butter

Directions

  1. Combine all ingredients for the Poolish.

  2. Let rise at room temperature for 30 minutes, then transfer to refrigerator for 12-16 hours.

  3. To prepare final dough: combine warm water and yeast, and 1 tbsp. sugar. Let stand for 10 minutes.

  4. Combine both flours, salt, remaining sugar and mix well.

  5. tivated yeast and oil, mixing to form a dough. Knead. Let rise. Punch down. let rise in bread pan. Bake at 375.
