Whole Wheat Sandwich Bread

Dry Active Yeast Based. Whole Wheat and Unbleached White Flour Mixture

Ingredients
- Poolish
- 200grams whole wheat flour
- 2oograms warm water
- 1/8 tsp. active dry yeast
- Dough
- Total amount of Poolish
- 225grams whole wheat flour
- 75 grams unbleached white flour
- 10 grams salt
- 110 grams water
- 2 tsp. active dry yeast
- 3 tbsp. honey/sugar
- 42 grams oil/melted butter
Directions

Combine all ingredients for the Poolish.

Let rise at room temperature for 30 minutes, then transfer to refrigerator for 12-16 hours.

To prepare final dough: combine warm water and yeast, and 1 tbsp. sugar. Let stand for 10 minutes.

Combine both flours, salt, remaining sugar and mix well.
