Beef and Mushroom Casserole

Ingredients
- 500g rump steak
- 1 onion
- 185g mushrooms (field mushrooms taste better)
- 1 tablespoon oil
- 30g butter or margarine
- 1 tablespoon flour
- 1 cup dry red wine
- 1 tablespoon brandy
- 2 teaspoons French mustard (I use Dijon)
- Salt + pepper

im steak into 2.5cm (1inch) pieces. Peel and coarsely chop onion. Trim mushrooms, chop roughly.

Heat oil and half the butter in pan, add steak gradually, cooking over high heat until steak is well browned all over. Place steak in ovenproof dish. Add remaining butter to pan, add onion and cook till transparent then add to dish. Add mushrooms to pan, stirring till just tender then add to dish.

Add flour to pan, cook, stirring for 1 minute. Stir in wine, brandy and mustard, stir until mixture boils and thickens, add to dish and cover.

Bake in moderate oven 45mins to 1 hour, or until steak is tender. Season with salt and pepper.
