This recipe is for the broth, which can be served over cooked soba or rice noodles with herbs, beansprouts, a squeeze of lime, hoisin and sriracha.

Prep time: 15 minutes
Cook time: 180 minutes
Serves 5 people

Ingredients

  • 2 lbs onions (white, yellow, red)
  • 1.5 oz fresh ginger
  • 1 T fennel seeds
  • 3 cardamom pods
  • 3 star anise
  • 5 cloves
  • 1/2 t black peppercorns
  • 1 cinnamon stick
  • 1/2 t sea salt
  • 6 cups water

Directions

  1. Peel and halve onions.

  2. Wash and slice ginger (leaving skin on).

  3. Char ginger and onions under broiler, on grill, or on burner.

  4. To the pot of water, add spices, onions, ginger and salt.

  5. Bring to a boil and let simmer for at least 1 (but optimally 3) hours.

  6. Strain.
