Nut Cookies

A versatile vegan cookie. Try almond joy or coconut curry cashew

Ingredients

  • 2 cups whole almonds (or similar nut)
  • 4 cups quick outs
  • 1/2 t salt
  • 1 1/2 cups flour
  • 1 cup canola oil
  • 1 cup maple syrup (can substitute honey, or mix with brown sugar)
  • Filling or topping: coconut, chocolate chips, dried fruit, jam

Directions

  1. Preheat oven to 350 degrees. Line baking sheets.

  2. In a food processor, pulse almonds until they are chopped (don’t make almond flour)

  3. Grind oats with the salt (it’s ok to leave texture).

  4. Add oat mixture to almonds.

  5. Add 1 1/4 cup flour. Mix.

  6. Add mix-ins of your choosing.

  7. Pour in sweetener and oil.

  8. Mix until combined, and add more flour if it’s too runny.

  9. Let sit for about 15 minutes.

  10. Form walnut-sized balls.

  11. If adding jam, make an indentation and fill it with jam.

  12. Bake for 15 minutes.

  13. Remove from oven and let cool for about 15 minutes before moving to a rack.
