Al’s Pico de Gallo

Hand chopping gives a better consistency, but you could throw all the ingredients except the limes into a food processor.

Ingredients
- 8-10 Roma Tomatoes
- 4 Anaheim Peppers
- 3 Bunches green onions
- 1 Bunch of Cilantro
- 2 Limes
- Salt and Pepper
Directions

Chop first four ingredients into 1/4" pieces.

Mix first three ingredients in a bowl.

Add enough of the cilantro to get the right color (about 1/2 of the bunch)

Heat the limes for 30 seconds in a microwave and juice with tongs into the bowl.

Add salt and pepper to taste. Taste test on chips so that you have the salt from the chips too.
