Yellow Rice with Black Beans and Corn

Ingredients
- 1 t olive oil
- 1 cup diced onion
- 2 cloves garlic, crushed
- 1 cup long grain rice, uncooked
- 2 cups water
- 1/4 tsp threads of saffron
- 1/2 cup canned black beans, drained
- 1/2 cup frozen corn
- 1/4 t salt
- 1/4 t pepper
Directions

Add oil to skillet and place over medium-high heat until hot. Add onion and garlic, saute 2 minutes.

Add rice and saute 2 minutes. Add water and saffron. Cover, reduce heat, and simmer 20-25 minutes or until rice is done.

Stir in black beans and corn.
