Yellow Rice with Black Beans and Corn

Ingredients

  • 1 t olive oil
  • 1 cup diced onion
  • 2 cloves garlic, crushed
  • 1 cup long grain rice, uncooked
  • 2 cups water
  • 1/4 tsp threads of saffron
  • 1/2 cup canned black beans, drained
  • 1/2 cup frozen corn
  • 1/4 t salt
  • 1/4 t pepper

Directions

  1. Add oil to skillet and place over medium-high heat until hot. Add onion and garlic, saute 2 minutes.

  2. Add rice and saute 2 minutes. Add water and saffron. Cover, reduce heat, and simmer 20-25 minutes or until rice is done.

  3. Stir in black beans and corn.
