Italian Sausage Risotto

Ingredients

  • 1 Tbl olive oil
  • 1 lb Italian sausage or Italian chicken sausage
  • 1 cup chopped sweet onion
  • 1 Tbl minced garlic
  • 1/2 tsp dried thyme
  • 1 1/4 cups Arborio rice
  • 1 cup Chardonnay or dry white wine
  • 3 1/2 cups chicken broth
  • 1 cup frozen peas
  • 1/2 cup Parmesan cheese

Directions

  1. In a large, heavy saucepan, heat oil over medium heat.

  2. Saute sausage and onion until onion is translucent and sausage is browned.

  3. Add garlic and thyme and cook 30 seconds.

  4. Add rice and wine, stir 1-2 minutes until wine is absorbed.

  5. Stir in 3 cups of broth. Lower heat to medium-low and simmer, uncovered, until broth is absorbed, stirring occasionally, about 15 minutes.

  6. Continue adding the last 1/2 cup of broth a bit at a time, stirring until liquid is absorbed and rice is tender and creamy.

  7. Stir in peas and 1/4 cup parmesan, cook until heated through.

  8. Season with black pepper.

  9. Garnish with parsley and remaining cheese.
