Tracey’s Pasta Salad with Corn & Tomatoes

Serves 6 people

Ingredients

  • 5 T olive oil
  • 5 T red wine vinegar
  • 1/2 C fresh basil, torn
  • 2 cloves garlic, chopped
  • 1 1/2 C corn kernels
  • 500 g plum tomatoes, chopped
  • 250 g penne pasta, freshly cooked
  • 1/2 C grated parmesan cheese

Directions

  1. Shake together oil and vinegar and toss over remaining ingredients, combined in large salad bowl.

  2. Serve at room temperature if freshly made.

  3. Can add flaked tuna, chopped chicken, cooked prawns if serving as main meal.
