Neenish Tarts

Serves 12 people

Ingredients

  • Pastry:
  • 125 g butter, softened
  • 1/2 C caster sugar
  • 1 egg
  • 2 C plain flour
  • 1 t baking powder
  • Filling:
  • 1/2 C icing sugar
  • 100 g butter, softened
  • 1/2 C sweetened condensed milk
  • 2 T lemon juice
  • Icing:
  • icing sugar
  • butter, softened
  • cocoa powder
  • hot water

Directions

  1. Pastry:

  2. Cream butter and sugar, add egg then sifted flour & baking powder.

  3. Chill 15 minutes, then roll and line greased patty pans. Prick well. Chill again 15 minutes.

  4. Cook at 180oc approx 15 minutes, or until lightly coloured. Cool.

  5. Filling:

  6. Mix all ingredients together, until smooth and well combined.

  7. Spoon into cooked patty cases.

  8. Chill in refrigerator until filling is firm.

  9. Icing:

  10. Mix icing sugar, little softened butter and hot water to make spreadable consistency.

  11. Ice half of filled tart with white icing.

  12. To remaining icing, add cocoa powder mixed to smooth paste with little hot water, adding more icing sugar to make icing spreadable consistency.

  13. Now ice other half of tart with chocolate icing. Leave to set.

  14. Store in refrigerator.
