Lighter chicken cordon blew

Ingredients

  • 1/2 c panko
  • 1/4 c plus 1 tsp olive oil divided plust more for brushing
  • 3 tbsp red wine vinegar
  • 1 tbsp + 2 tsp dijon mustad divided
  • sugar
  • 8 chicken cutlets 1.5lbs
  • salt/pepper
  • 8 slices canadian bacon .5 lbs total
  • 4 ounces swiss
  • 5 ozs tender baby lettuces spring mix 5 c

Directions

  1. Heat broiler.

  2. In small bowl mix together panko and 1tsp oil until coated.

  3. Combine vinegar, 1 tbsp mustard and remaining 1/4 c olive oil and a pinch of sugar shake to combine.

  4. Season chicken with salt and pepper.

  5. Rimmed baking sheet make 4 stacks sandwhiching canadian bacon and swiss between 2 chicken cutlets.

  6. Brush tops with oil season with salt and pepper and broil until golden and cooked through 7 min.

  7. Spread each stack with 1/2 tsp mustard and sprinkle with panko.

  8. Broil until panko is golden and toasted. 1-2 min.

  9. Toss lettuce with half the dressing season with salt and pepper serve with chicken.
