Ingredients
- 1/2 c panko
- 1/4 c plus 1 tsp olive oil divided plust more for brushing
- 3 tbsp red wine vinegar
- 1 tbsp + 2 tsp dijon mustad divided
- sugar
- 8 chicken cutlets 1.5lbs
- salt/pepper
- 8 slices canadian bacon .5 lbs total
- 4 ounces swiss
- 5 ozs tender baby lettuces spring mix 5 c
Directions

Heat broiler.

In small bowl mix together panko and 1tsp oil until coated.

Combine vinegar, 1 tbsp mustard and remaining 1/4 c olive oil and a pinch of sugar shake to combine.

Season chicken with salt and pepper.

Rimmed baking sheet make 4 stacks sandwhiching canadian bacon and swiss between 2 chicken cutlets.

Brush tops with oil season with salt and pepper and broil until golden and cooked through 7 min.

Spread each stack with 1/2 tsp mustard and sprinkle with panko.

Broil until panko is golden and toasted. 1-2 min.

Toss lettuce with half the dressing season with salt and pepper serve with chicken.
