Asparagus Spinach and Chicken “clafoutis”

Serves 6 people
Categories: relatively low carb
Ingredients
- 3T olive oil
- 1 onion finely chopped
- 2 cloves garlic, finely chopped
- 2 handfuls baby spinach leaves
- 400g asparagus - coarse ends snapped off, spears halved longitudinally
- 400g chickpeas, drained
- 300 ml cream (or substitute low fat alt)
- 4 eggs, beaten
- 1/4t ground nutmeg
- salt and freshly ground pepper
- 1/2 c finely grated parmesan
Directions

Preheat oven to 180deg C

fry onion and garlic in olive oil til soft

add spinach & asparagus and stir fry til spinach wilts

put vegetable mixture & chickpeas inot a shallow ovenproof dish

mix cream, eggs & nutmeg

season with salt and pepper

pour over vegetable chickpea mixture

sprinkle parmesan
-
bake in oven 20 – 30 min until set & browned
