Asparagus Spinach and Chicken “clafoutis”

Serves 6 people

Categories: relatively low carb

Ingredients

  • 3T olive oil
  • 1 onion finely chopped
  • 2 cloves garlic, finely chopped
  • 2 handfuls baby spinach leaves
  • 400g asparagus - coarse ends snapped off, spears halved longitudinally
  • 400g chickpeas, drained
  • 300 ml cream (or substitute low fat alt)
  • 4 eggs, beaten
  • 1/4t ground nutmeg
  • salt and freshly ground pepper
  • 1/2 c finely grated parmesan

Directions

  1. Preheat oven to 180deg C

  2. fry onion and garlic in olive oil til soft

  3. add spinach & asparagus and stir fry til spinach wilts

  4. put vegetable mixture & chickpeas inot a shallow ovenproof dish

  5. mix cream, eggs & nutmeg

  6. season with salt and pepper

  7. pour over vegetable chickpea mixture

  8. sprinkle parmesan

  9. bake in oven 20 – 30 min until set & browned
