Sweet Potato and Lentil Burritos

Ingredients

  • 4 large sweet potatoes
  • 1 T cumin
  • 2 tsp chili powder
  • salt to taste
  • 6 large whole wheat tortillas
  • 2 cups cooked lentils
  • 1 cup salsa
  • 2 cups cheddar or monterey jack, shredded

Directions

  1. Roast sweet potatoes at 425 for 1 hour (or just microwave)

  2. Remove sweet potatoes from oven. Once cool, peel and mash. Add cumin, chili and a pinch of salt. Mix well and set aside.

  3. Spread sweet potatoes and cooked lentils in tortilla. Top with salsa and cheese. Roll up. Place in oiled baking dish. Sprinkle with cheese and cook 10-15 minutes or until cheese is golden brown.
