Baked Rice

Ingredients

  • 2 T olive oil
  • 1 medium onion, diced
  • 2 garlic cloves diced
  • 2 stalks celery diced
  • 2 carrots diced
  • 1/2 cup brown rice
  • 3/4 cup uncooked lentils
  • 1 tsp cumin
  • 1-2/3 cup veggie broth
  • 1 cup crushed tomatoes (with juice)
  • salt and pepper to taste
  • 2 cups greens (spinach and kale work best), chopped
  • 1/2 cup monterey jack cheese, shredded

Directions

  1. Preheat oven to 325

  2. In Dutch oven heat oil over medium heat, then saute onion, garlic, celery, and carrots until tender, about 5 minutes. Add rice, lentils, and cumin, then stir 1 minute. Add broth, tomatoes, salt and pepper, stir to combine.

  3. Bake 1-1/2 hours.

  4. Mix in green and cheese. Bake 15-30 minutes more, or until done.
