Ingredients
- 2 T olive oil
- 1 medium onion, diced
- 2 garlic cloves diced
- 2 stalks celery diced
- 2 carrots diced
- 1/2 cup brown rice
- 3/4 cup uncooked lentils
- 1 tsp cumin
- 1-2/3 cup veggie broth
- 1 cup crushed tomatoes (with juice)
- salt and pepper to taste
- 2 cups greens (spinach and kale work best), chopped
- 1/2 cup monterey jack cheese, shredded

Preheat oven to 325

In Dutch oven heat oil over medium heat, then saute onion, garlic, celery, and carrots until tender, about 5 minutes. Add rice, lentils, and cumin, then stir 1 minute. Add broth, tomatoes, salt and pepper, stir to combine.

Bake 1-1/2 hours.

Mix in green and cheese. Bake 15-30 minutes more, or until done.
