Ingredients
- 2 large white potatoes
- 2 medium zukes
- 2 large carrots
- 1/2 tsp salt
- 2 eggs, beaten
- 1 small onion, finely chopped
- 1/2 cup flour
- 1/2 tsp thyme
- salt and pepper to taste
- peanut oil
Directions

Grate potatoes, zukes, and carrots. Mix together in large bowl with 1/2 tsp salt. Let sit 5 minutes, then squeeze out excess liquid. Stir in beaten eggs, chopped onion, flour, thyme, salt, and pepper.

In large skillet, heat oil over medium to medium-high heat. Using measuring scoop, for each pancake drop 1/4 cup of mix into pan and fry until golden brown (3—5 minutes per side).

Drain on paper towels and serve immediately.

**Instead of frying you can bake for 25 minutes on 400 degrees on sprayed baking sheet. Flip and bake 15 minutes longer.
