Potato Corn Chowder

Ingredients
- 6 Medium Potato's (any kind)
- 1 Lg Yellow Onion
- 10 Bacon slices
- 2 Cups Frozen Corn
- 1 1/2 Cups Chopped Carrots
- 2 14oz Cans Chicken Broth
- 6 Tbsp all purpose flour
- 3 Cups 2% Milk
- 4 tbsp butter
- 1 tsp chopped garlic
- 1 tsp tyme
- 2 tsp parsley flakes
- 2 tsp salt
- 1/2 tsp black pepper

Crisp the bacon, pat off all grease, chop into 1/4" squares. Set aside.

In a 6 Qt Pot, melt butter, add chopped onions, add garlic, add Parsley. Saute for 10 min.

In same pot, now add 2-cans chicken broth, cleaned skin-on diced potato’s, frozen corn, chopped carrots, bacon pieces, and remaining seasonings, gently boil for 15 minutes with lid on.

Thicken in two passes. First, use 3 Tbsp flour and 1 1/2 cups milk combined in a shaker. Slowly add this to the mixture, stirring CONSTANTLY. Second, repeat.

Simmer for another 15 minutes (or longer) and serve.
