Cheesecake Bars

Ingredients

  • 1 1/4 cups crisp sugar cookie crumbs
  • 1/4 cup (1/2 stick) butter, melted
  • 1/2 cup milk
  • 2 tsp unflavored gelatin
  • 1 8 oz pkg cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup powdered sugar
  • 1 1/2 tsp vanilla extract

Directions

  1. Line an 8×8×2 inch baking pan with foil; lightly spray with nonstick cooking spray. Set aside.

  2. In a medium bowl, combine the sugar cookie crumbs and melted butter with a fork or fingers until well blended. Transfer crumb mixture to prepared pan. Press firmly into bottom of pan with large square of wax paper. Freeze until ready to use.

  3. Place the milk in a small saucepan; sprinkle gelatin over (do not stir). Let stand 10 mins to soften. Turn the heat under saucepan to medium. Whisk and stir until milk is very hot (but not boiling) and gelatin is completely dissolved. Remove from heat and set aside momentarily.

  4. In a large bowl, beat the cream cheese, sour cream, powdered sugar and vanilla with electric mixer on medium speed until creamy. Gradually add gelatin milk mixture, beating on low speed and occasionally scraping sides of bowl with a rubber spatula, until well blended.

  5. Pour and evenly spread cream cheese mixture over prepared crust. Refrigerate 3 hrs or until firm. Use foil lining to remove uncut bars from pan to cutting board. Cut into 16 bars. Store, loosely covered with foil or plastic wrap in refrigerator.
