Whole Wheat Pancakes

Ingredients
- 2 eggs, lightly beaten
- 1/4 cup applesauce
- 2 cups skim milk with 2 tbs. white vinegar/lemon juice (let sit 5 min.)
- 2 teaspoons baking soda
- 1/2 cup ground/milled flax seed
- 1/2 teaspoon salt
- 1-1/2 cups whole wheat flour
Directions

In a medium bowl, mix eggs with applesauce and buttermilk

Add baking soda, flax seed, salt and flour; mix until blended

Heat a lightly-oiled griddle or frying pan over medium-high heat

Pour or scoop the batter onto the griddle (approximately 1/4 cup for each pancake)

Brown on both sides, turning once (like cooking any pancakes, wait for bubbles on the first side)
