Ingredients
- 1/4 cup (1/2 stick) butter
- 4 cups miniature marshmallows
- 1 tbsp grated lime zest
- 1 tsp ground ginger
- 5 cups Rice Krispies
- 1 1/2 cups sweetened flake coconut
- 1/2 cup coarsely chopped, roasted, lightly salted macademia nuts, optional
Directions

Lightly spary 9×9×2 inch square baking pan with non-stick cooking spray; set aside.

Melt the butter in a large saucepan set over low heat. Add the marshmallows; stir until completely melted. Remove from heat and stir in lime zest and ginger.

Add the cereal coconut and nuts if desired. Stir until well coated.

Using wax paper, press mixture evenly into prepared pan. Cool in refrigerator about 30 mins. Cut into 12 bars. Store in covered containers between sheets of wax paper.
