Parsley Pesto

Delicious with cooked fish
Stir through cooked egg noodles or pasta
Smear lavishly over flat bread or pita

Prep time: 10 minutes

Ingredients

  • 1C tightly packed parsley leaves
  • 1/2 C cashews or walnuts, lightly toasted
  • 1/2 C grated parmesan cheese
  • 1 clove garlic, crushed
  • juice & zest 1/2 lemon
  • 1/3 - 1/4 C olive/ricebran oil
  • salt & pepper to taste

Directions

  1. Pulse first 5 ingredients in food processor, until chopped to your liking.

  2. Add oil in a thin stream, then season to taste.
