Parsley Pesto

Delicious with cooked fish
Stir through cooked egg noodles or pasta
Smear lavishly over flat bread or pita
Prep time: 10 minutes

Ingredients
- 1C tightly packed parsley leaves
- 1/2 C cashews or walnuts, lightly toasted
- 1/2 C grated parmesan cheese
- 1 clove garlic, crushed
- juice & zest 1/2 lemon
- 1/3 - 1/4 C olive/ricebran oil
- salt & pepper to taste
Directions

Pulse first 5 ingredients in food processor, until chopped to your liking.

Add oil in a thin stream, then season to taste.
