Mint & Coriander Pesto

Serve with chicken or pork, cooked with marinade of chilli jam, lime juice & fish sauce

Ingredients

  • 1 bunch coriander leaves
  • 1/2 bunch mint leaves
  • 2 cloves garlic
  • sea salt
  • 1/2 C roasted cashews
  • 1/4 C oil
  • 2 T lime juice
  • salt & freshly ground pepper to taste

Directions

  1. Process herbs, sea salt & cashews until finely chopped (or to your preference).

  2. Add oil & lime juice, combining thoroughly.

  3. Season with salt & pepper to taste.
