Mint & Coriander Pesto

Serve with chicken or pork, cooked with marinade of chilli jam, lime juice & fish sauce

Ingredients
- 1 bunch coriander leaves
- 1/2 bunch mint leaves
- 2 cloves garlic
- sea salt
- 1/2 C roasted cashews
- 1/4 C oil
- 2 T lime juice
- salt & freshly ground pepper to taste
Directions

Process herbs, sea salt & cashews until finely chopped (or to your preference).

Add oil & lime juice, combining thoroughly.

Season with salt & pepper to taste.
