Spanakopita

Prepared logs can be frozen for up to 3 months. Allow to thaw for several hours or overnight before baking.

Ingredients
- 1 egg, beaten
- 1 10-oz package frozen chopped spinach, thawed and drained
- 1 cup feta cheese
- 1 8-oz tub Garden Vegetable cream cheese
- 4 green onions, finely chopped
- 15 sheets phyllo dough, thawed
- 1/3 cup butter, melted
Directions

eheat oven to 375.

Mix first five ingredients together.

Layer three sheets of phyllo with butter between each sheet.

Spread 1/5 of the spinach mixture along the short side of the phyllo stack.

Fold in the long sides of the phyllo and roll up from the short side to make a log; repeat.

Brush phyllo logs with remaining butter.

Make small cuts in the tops of the logs at 1-inch intervals.

Bake for 25 minutes; allow to cool for 5 minutes before slicing.
