Spanakopita

Prepared logs can be frozen for up to 3 months. Allow to thaw for several hours or overnight before baking.

Ingredients

  • 1 egg, beaten
  • 1 10-oz package frozen chopped spinach, thawed and drained
  • 1 cup feta cheese
  • 1 8-oz tub Garden Vegetable cream cheese
  • 4 green onions, finely chopped
  • 15 sheets phyllo dough, thawed
  • 1/3 cup butter, melted

Directions

  1. eheat oven to 375.

  2. Mix first five ingredients together.

  3. Layer three sheets of phyllo with butter between each sheet.

  4. Spread 1/5 of the spinach mixture along the short side of the phyllo stack.

  5. Fold in the long sides of the phyllo and roll up from the short side to make a log; repeat.

  6. Brush phyllo logs with remaining butter.

  7. Make small cuts in the tops of the logs at 1-inch intervals.

  8. Bake for 25 minutes; allow to cool for 5 minutes before slicing.
