Plum and Coconut Muffins

Made with fresh fruit. When plums are not in season, substitute with diced apples or pears, or frozen berries.

Prep time: 10 minutes
Cook time: 20 minutes
Serves 12 people

Ingredients

  • 90 g butter, softened
  • 1 C caster sugar
  • 2 eggs
  • 1/2 C yoghurt
  • 2 1/2 C self raising flour, sifted
  • 1/2 C milk
  • 1/2 C dessicated coconut
  • 1 C diced plums, stones removed
  • thread coconut to sprinkle

Directions

  1. Beat butter & sugar until fluffy, beat in eggs.

  2. Stir in coconut, then flour, milk and coconut, stirring only to combine.

  3. Gently fold in plums.

  4. Spoon in to paper lined muffin tins and sprinkle tops with thread coconut, pressing down gently to help coconut ‘stick’.

  5. Bake approx 20 minutes at 180oC, until firm & golden.
