Royal Shortbread

Nice shortbread recipe.
Perfect gift idea for special person.
Keeps well.

Cook time: 20 minutes
Serves 30 people

Ingredients
- 225 g butter, softened
- 110 g icing sugar, sifted
- 275 g plain flour
- 60 g cornflour
- caster sugar to sprinkle
Directions

Cream butter, blend in icing sugar and whisk until light in colour.

Slowly mix in flour & cornflour, sifted together.

Knead gently.

Roll dough out to 6mm thickness, cut into bars and mark with tines of a fork.

Chill on paper lined trays 15 mins.

Sprinkle with caster sugar and bake at 150oC (not fan setting) 15-20 mins.

Cool 5 minutes on tray before transferring to cooling rack.
