Oriental lemongrass skewers

In the middle of Summer, this fantastic 5-minuter dish will keep you fit and healthy without any of the hassles of lengthy preparation or complicated ingredients. The recipe for Oriental marinade is listed in Oriental Glazed Salmon

Ingredients
- ·1 kg fillet of tuna
- ·4 sticks of lemongrass
- ·1 cup oriental marinade
- ·4 limes cut into 8 halves
Directions

Sprinkle lime halves with sugar and place cut side down on bbq until nicely browned and caramelized.

Cut the tuna into large bite-size cubes. Place in the marinade and leave refrigerated for one hour.

Cut the lemongrass in half lengthwise and skewer cubes of fish onto each skewer.

Over hot coals, sear the tuna on all sides.

If you wish, place remaining marinade in a saucepan and cook on the stove until it is reduced to a deliciously rich syrup to pour over the cooked skewers.

Serve garnished with caramelized limes and snipped chives.
