Orzo Corn Chowder

Ingredients

  • 1 1/3 C orzo, uncooked
  • 1/4 lb bacon
  • 1/2 C chopped onion
  • 1/4 C chopped parsley/cilantro
  • 2 C chicken broth
  • 2 C milk
  • 1 1/2 C frozen corn, thawed
  • 1/4 t pepper

Directions

  1. Cook orzo according to package instructions and drain.

  2. Meanwhile, in 5 qt saucepan, brown bacon until almost crisp. Drain excess fat.

  3. Add onion and parsley/cilantro and continue cooking until onion is tender but not brown.

  4. Stir in cooked orzo, chicken broth, milk, corn and pepper.

  5. Heat to serving temperature.
