Pumpkin Cookies

“light and puffy”
frost with browned butter frosting recipe

Cook time: 8 minutes

Ingredients

  • 1 c shortening
  • 1 c sugar
  • 1 egg, beaten
  • 1 c pumpkin
  • 1 t vanilla
  • 2 c flour
  • 1 t soda
  • 1/2 t salt
  • 1 t baking powder
  • 1 1/2 t cinnamon
  • 1/2- 1 c nuts, chopped
  • 1/2 c dates(optional)

Directions

  1. Mix ingredients together and drop onto lightly greased cookie sheet.

  2. Bake at 375 for 8-10 min.

  3. When cool frost with browned butter frosting.
