Kale Salad

Ingredients

  • 1 bunch of kale
  • Juice of one lemon
  • 2 TB Extra-Virgin Olive Oil
  • 2 Heaping TB Pine Nuts
  • 2 Heaping TB Dried Cranberries
  • Salt, Pepper, & Garlic Powder to taste

Directions

  1. Tear kale into chunks and massage with oil and lemon juice. Marinate for 10 min. Toss with nuts, cranberries, and seasoning. If desired, add crumbled goat cheese. Can keep for 2 days.
